Kaiser rolls are known for being great sandwich rolls. Their firm texture helps hold your sandwich ingredients in, and their mild flavor pairs well with whatever sandwich fillings you choose. But what if you want to get a little more adventurous? Then, you should consider making a sweeter kaiser roll to offset some of the salty, savory flavors in your sandwich fillings. Here's a recipe for bakery-style, sweet and nutty kaiser rolls that are perfect for sandwiches.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup almond flour
  • 1 envelope of active, dry yeast
  • 1 cup warm water
  • 2 tablespoons canola oil
  • 1 1/2 teaspoons salt
  • 2 tablespoons white sugar
  • 1/4 cup honey, divided
  • 1 egg white

Instructions:

Start by combining the yeast, warm water, and white sugar. Let this mixture sit for 5 minutes, or until it becomes white and foamy. Give it a gentle stir, and then add in 1 cup of all-purpose flour. Stir to form a really loose batter, and then let sit for 20 minutes. This initial rest gets the yeast really active.

Add the remaining all-purpose flour and wheat flour to the bowl, along with the salt and canola oil. Also, add 2 tablespoons of honey. Stir to form a soft dough, and then slowly stir in the almond flour. Knead the dough for 5 minutes, or until smooth and elastic.

Place your kaiser roll dough in a lightly greased bowl. Cover it in plastic wrap, and let it rise for 1 hour in a warm place. Punch the dough down to remove excess air, and then divide it into 12 portions. Shape each portion into a roll.

Place the rolls on a lightly greased baking sheet. Cover them lightly in plastic wrap, and let rise for another 30 minutes. Meanwhile, whisk together the egg white and remaining honey. Once the rolls have completed their 30-minute rise, you can brush each one with this egg white and honey mixture. Be careful not to let the extra mixture drip onto the pan, as it may burn.

Put the risen rolls into a 400 degree F oven, and bake for 20-25 minutes. They should be evenly browned on the outside. Let cool completely before slicing and enjoying, either with butter or as a sandwich.

These bakery-style sweet and nutty kaiser rolls are a great twist on the classic. Give them a try; they're sure to become a family favorite.
